Sombi
Sombi is a traditional West African dish, popularly in Senegal. It is made from rice and coconut milk and served as a creamy, slightly sweet porridge or dessert.[1][2][3][4]
Prepare
In a 4-cup saucepan over medium heat, combine coconut milk, shredded coconut, sugar, salt, and the seeds from a vanilla bean. Bring to a boil, stirring often, and cook for about 5 minutes until slightly reduced. Add the rice and cook, stirring frequently, for another 5 minutes until the rice softens and the mixture thickens slightly. Remove from heat, stir in the juice, and serve hot.[2][1][4]
